Ingredients:
- 40 grams Greek yogurt (Approx 2 ½ tbsp)
- 40 grams canned pumpkin (Approx 2 ½ tbsp)
- 20 grams ANIMAL Brownie Batter protein powder (Approx ¾ scoop or about 3 tbsp, depending on density)
- 15 grams oat flour (Approx 2 tbsp)
- 15 grams cocoa powder (Approx 2 ½ tbsp)
- 2 packs sweetener of choice (varies by brand, typically 2 tsp total)
- 1/2 tsp baking powder
- 1/4 tsp coffee powder
- Pinch of salt
- 15 grams chocolate chips (Approx 1 tbsp)
- Optional but suggested for Serving: Salted Caramel Protein Creami
Instructions:
- Preheat the oven to 360ºF (180ºC) or the air fryer to 320ºF (160ºC).
- The beauty of this recipe is you use one bowl to mix everything! That’s right, throw everything in and mix until combined. (Depending on the type of flour you use, you may need to add 1-2 tsp of water or milk to thin out dough.)
- Transfer the brownie batter to a greased ramekin or skillet.
- Bake in oven for 10-12 minutes or Air Fry for 8-10 minutes. (Air frying is my suggestion!)
- Top with your favorite healthy choice ice cream. I make my Salted Caramel Protein Creami to go along with this, don’t worry, recipe coming soon!
